Barbecued Lobster Tails with a Garlic and Parsley Marinade

“Now we’re talking BARBECUE!”

 

Ingredients:

6 Lobster Tails, prepared with veins removed

6 tablespoons of extra virgin Olive Oil

3 tablespoons White Wine Vinegar

4 large cloves of Garlic, crushed

a handful of Parsley leaves, finely chopped

freshly grated Rock Salt and Black Pepper

 

Method:

  1. Mix together the oil, vinegar, garlic and parsley in a bowl.
  2. Season well with salt and pepper.
  3. Apply to marinade with a brush to the lobster meat and then chill in the refrigerator.
  4. Repeat the process after 30 minutes.
  5. Chill for at least an hour, more time is better if you have it.
  6. Cook the lobster tails either directly on the barbecue or wrapped in foil, which will seal in the flavour.
  7. Enjoy your Barbecued Lobster Tails with an array of salads. The garlic and parsley marinade lends itself to potatoes, couscous and pasta, producing a delightful dish which will awaken your tastebuds with delight.
